Cabernet Sauvignon 2007 born from bear small vines with intense flavor berries that once again produced exceptional wine. It has the enticing richness and depth of flavor characteristic of a classic Cabernet Sauvignon. The 2007 vintage offers cocoa, nut flavors, hints of tobacco balance with lighter notes of violets and a pleasant, lingering finish. Serve with rich meat dishes, creamy cheese or of course dark chocolate.

Layers of anise, cocoa,white pepper,Tobacco and Marionberry distinguish the 2006 vintage. The tannins are soft;the finish long and graceful. Let the wine breath before serving with meat or cheese.

The 2006 growing season began slowly with a cool spring and a late budbreak but accelerated quickly with warm weather during bloom and throughout the summer. Harvest was slightly earlier than normal and warm temperatures allowed flavors to fully mature. This wine continues Trium mission: to make premium wines with meticulous care and eco-friendly farming practices yielding intense and complex flavors. A classic blend of Merlot, Cabernet and Cabernet Franc. Its has elegance, structure, excellent balance and the lush ripeness of Southern Oregon grapes.
